Cooking with backyard chicken eggs ~ Egg White Crepes Recipe

I am hoping to start utilizing our backyard hens eggs in some new and exciting ways, to me. Since I have not really had any experience in throwing away yolks for making egg white only recipes…my current situation and outlook on using our silkie hens eggs is now different. I am starting to look for some easy and delicious (hopefully kid friendly) recipes to bring to the table!
Silkie eggs have a darker yolk, which is a little different than the “normal” store eggs I am used to cooking with. When scrambled, a silkie’s eggs will be orange in appearance and seemingly more dense and buttery looking. For this reason I mainly use the silkie eggs in baking recipes. Again, the batter will have a more yellow appearance but other than that things taste good! So I usually mix store eggs and our own bantam hen’s eggs together and have been leaving some of the darker yolks of the silkie egg out when scrambling them. But still a slightly difference color and texture takes some getting used to, for me. My kids absolutely love using their chickens eggs in our family recipes. It has been so fun watching the kids interaction with the chickens and finally finding eggs is the icing!
Egg White Crepes
Ingredients
- 1/2 cup whole wheat flour
- 2 egg whites
- 1/2 cup skim milk
- 1 pinch salt
- 1 tablespoon vegetable oil
- 1/2 cup mixed frozen berries, thawed and drained
- 1 tablespoon confectioners’ sugar for dusting
Directions
- Whisk together the wheat flour, egg whites, milk, salt, and oil in a large bowl until smooth.
- Lightly coat a skillet with cooking spray and place over medium heat. Pour 1/4 cup of the batter into the skillet. Tilt the pan in a circular motion to allow the batter to spread to the edges. Cook until the bottom is light brown, about 2 minutes. Flip the crepe and place 2 tablespoons of the mixed berries in the center of the crepe; cook another 2 minutes. Fold the crepe in half and remove with a spatula to a serving plate. Dust with confectioners’ sugar and serve.
